Ingredients
- 1 cup of all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking power
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk
- 1/2 cup low-fat plain yogurt
- 1 egg, lightly beaten
- 3 tbsp vegetable oil
- 1/2 cup Sweet Home Farm Honey Nut Granola
Garnish
- 1 cup fresh raspberries, blueberries, or blackberries
- 1/2 cup low-fat plain or vanilla yogurt
- 1/2 cup Sweet Home Farm Honey Nut Granola
- 1/4 cup maple syrup or honey
Directions
- In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk milk, yogurt, egg, and one tbsp of vegetable oil.
- Stir liquid mixture into the flour mixture until just combined. Fold in granola.
- Lightly brush large nonstick skillet with some of the remaining oil. Heat over medium heat.
- Using scant 1/4 cup of batter per pancake, pour four pancakes into skillet.
- Cook for about 2 minutes or until bubbles appear on the top the bottom is golden brown.
- Flip and cook for about 1 minute or until bottom is golden brown.
- Repeat with the remaining batter and oil.
To Serve: Garnish pancakes with berries, yogurt, granola, and maple syrup.
